Has anyone ever tried making beer without hops like it was done before hops were discovered / used? Just curious?
The beers before hops were flavored with other spices like Heather and Bog Myrtle, but the style of Gruit is what you are asking for.
The trick was that there was a lot of spontaneous and random fermentation. In fact, there were stirring sticks that made better beer than others, and were prized family heirlooms.
Before that, beer was consumed whilst still fermenting, before it went sour. At least that is what archaeologists have reported… Some of the most hopless beers available are Belgian Single, Dubbel, and Budweiser.
