Difference Between Boiling For 60 Minutes and 90 Minutes


How does the Length of the Boil effect the finished Brew?  I notice  that some recipes call for 60 min boil and some for 90 min.


Length of boil in a recipe could be for a number of reasons which might include the following.

  • Increasing bitterness from hops
  • Added caramelizing of sugars
  • Improving mash efficiency
  • Adding more maltier profile
  • Reducing overall volume

If you find a batch you really like that you boil for 60 min, try a second batch at 90 min to see if there are any differences in flavor, aroma, etc.
