How does the Length of the Boil effect the finished Brew? I notice that some recipes call for 60 min boil and some for 90 min.
Length of boil in a recipe could be for a number of reasons which might include the following.
- Increasing bitterness from hops
- Added caramelizing of sugars
- Improving mash efficiency
- Adding more maltier profile
- Reducing overall volume
If you find a batch you really like that you boil for 60 min, try a second batch at 90 min to see if there are any differences in flavor, aroma, etc.
